Saffron Milk: Recipe, Iced Version and How Much Saffron to Use
How do you make saffron milk? Crush 10 to 15 saffron threads and soak them in 2 tablespoons of hot water or hot milk for 10 minutes, until the liquid turns golden. Warm a cup of milk with two cardamom pods without letting it boil, then stir in the saffron and sweeten to taste. Drink it hot, or chill it and pour it over ice for iced saffron milk.
Saffron milk is a classic warm drink in Gulf homes, and many cafés now serve it iced in the summer. The secret is one step that many people skip: soaking the saffron before adding it, so the milk gets its full colour and aroma. This guide covers how to make saffron milk hot and iced, how many saffron threads to use per cup, what research actually says about its benefits, and when to avoid it.

Saffron milk ingredients (one cup)
- 1 cup of milk (about 240 ml): full-fat for a richer texture, or any plant milk you like.
- 10 to 15 saffron threads.
- 2 tablespoons of hot water or hot milk to soak the saffron.
- 2 cardamom pods, lightly crushed, or a pinch of ground cardamom.
- To sweeten, if you like: honey, date syrup or a sugar-free sweetener.
- Optional: a few drops of rose water and ground pistachio to garnish.
How to make saffron milk, step by step
- Crush the saffron: rub the threads between your fingers or grind them in a small mortar with a pinch of sugar or salt so they release their colour faster.
- Soak for at least 10 minutes: put the saffron in 2 tablespoons of hot (not boiling) water or milk and leave it until the liquid turns golden orange. The longer it soaks, the stronger the colour and aroma.
- Warm the milk with cardamom: over a low heat until small bubbles appear at the edges, without boiling.
- Mix and serve: add the saffron and its soaking liquid, stir for a minute, sweeten to taste and garnish with pistachio or a few drops of rose water.
How to make iced saffron milk
Make saffron milk the same way, let it cool completely and chill it for at least an hour. Pour it into a glass full of ice, or blend it with ice cubes for a creamy, lightly frothy drink. For a stronger taste in the cold version, add a few more threads or soak the saffron in cold milk overnight in the fridge, because cold drinks taste milder.

How many saffron threads per cup of milk?
Saffron threads are the stigmas of the saffron crocus. Three are hand-picked from each flower, which is why a pound (about 450 g) of saffron takes around 75,000 flowers.3 That makes a single thread very light, roughly 2 mg, so 10 to 15 threads add up to only a few dozen milligrams. That is enough for one golden, fragrant cup, and it is an ordinary food amount.
| Amount | Threads | Result |
|---|---|---|
| 1 cup (240 ml) | 8 to 10 | Light colour, gentle flavour |
| 1 cup (240 ml) | 10 to 15 | Golden colour, balanced flavour |
| 1 jug (4 cups) | 30 to 40 | For guests and gatherings |
Adding much more does not make it better. It makes the drink bitter, since saffron has a strong aroma and a naturally bitter taste.3
Saffron milk benefits: what does the research say?
Most saffron research has been done on supplements and extracts at measured doses, not on a cup of milk. The largest systematic review in this area pooled 23 clinical trials and found that saffron supplements improved symptoms of depression and anxiety compared with placebo. The researchers also noted publication bias and that the trials came from a limited number of regions, and said more studies are needed.1
So it is more accurate to think of saffron milk as a delicious, caffeine-free warm drink for evenings and guests, not as a treatment. If you have mood or sleep problems, talk to a doctor rather than relying on herbs alone.
Saffron milk before bed
A warm cup of saffron milk at bedtime is an old habit in many homes, and its main advantage is that it has no caffeine, unlike coffee, tea and karak. There is not enough evidence that a cup of saffron milk improves sleep by itself, because the available trials used concentrated extracts. For other caffeine-free options, see our guides to rooibos tea and hibiscus tea.
Is saffron milk safe, and when should you avoid it?
Food amounts are safe for most people. Up to 1.5 g of saffron a day is thought to be safe, while toxic effects have been reported at 5 g.2 A cup of saffron milk contains only a tiny fraction of a gram. Still, keep these points in mind:
- Pregnancy: amounts far higher than those used in food can stimulate the uterus, so pregnant women are advised not to take saffron as a supplement or in large amounts, and to check with their doctor before drinking saffron milk regularly.2
- Medication: if you take regular medication, ask your doctor or pharmacist before using saffron supplements.
- Allergies: saffron allergy is uncommon but possible.2 If you are allergic to milk or lactose intolerant, use a plant milk.
Tips for the best saffron milk
- Do not boil the milk after adding the saffron; a gentle warm is enough to keep its aroma.
- Store saffron threads in an airtight container away from light and moisture.
- Try saffron in karak too: saffron and cardamom are two of the best-loved tea flavours in the Gulf. Read our saffron karak tea recipe.
